Abstract

This paper entitled "Chemical characterization of corn steep water UEB Glucose Cienfuegos and obtained using Green Sulf " aims to make  an analysis of chemical characterization of raw materials and water corn steep UEB Glucose Cienfuegos and obtained using Green Sulf. The laboratory study included the characterization of corn and the realization of a 23 factorial design laboratory scale that determined the best conditions of maceration within the range studied using Green Sulf. The steep water both processes are subjected to a series of chemical tests  -characterizing the physical quality of maceration, in order to compare the processes and  get if changing technology while maintaining or increasing yields starch company may.
