Potenciality of the Moringa seed as a food ingredient beneficial for health

The quantity of nutrients in a food determines its quality. The objective of the work was to quantify the
chemical composition (macronutrients, micronutrients, fatty acids and properties physical-chemistry) of the
powder and oil of seeds of Moringa oleifera Lam. ecotipo Plain acclimated in Cuba and point out the benefits
that its consumption brings to human health. The sample is prepared and it characterizes using procedures
normados or established previously. The results show that these seeds have high levels of fat and protein,
which gives them importance as a food with energy and nutritional value. In addition to the minerals present
such as calcium, zinc, potassium, iron, magnesium, corroborating the potential of this crop as an additive in
different matrices food, beneficial for health.
