Yield the Mannan in the Secondary Current of β-1,3-Glucano Obtaining Process

Abstract

The yield of the mannan obtained in the basic supernatant of the glucan process from Saccharomyces cerevisiae was evaluated. The basic supernatant was kept at temperatures of 5 ± 3 °C and 27 ± 3 °C during 90 days. The levels of carbohydrates and proteins were also determined. The best yields were obtained in the supernatant kept up to 45 days at temperatures from 2 to 8 °C, and for only 24 h at temperature from 24 to 30 °C. The yield and the product characteristics were significantly affected at higher times. No significant differences (p < 0,05) in the concentration assessment of the total
carbohydrates and proteins were observed.
