Abstract

Various procedures have been used for the production of edible mushrooms, based not only on solid and submerged fermentation, but also incorporate other elements such as control of growth parameters and nutritional requirements. Today, biotechnology has become a promising discipline for this purpose, due to the ease with which they can be cultivated and the multiple applications they possess. In general, the characteristics of the substrates used in the cultivation of edible mushrooms of the Pleurotus genus are associated with their functional effects, organoleptic and chemical characteristics. In the present work, a compilation on the procedures for the production of edible mushrooms of the Pleurotus genus was made, with potential pharmacological applications.
